Probably one of my new favourite pastries is the Paris-Brest 🤤 this one from @laboulebakery was almost too pretty to eat, but the delicious hazelnutty-ness was 100% worth it. It was so nice to be able to sit in the cafe and eat our goodies while avoiding the heat 😊
For those of you wondering, it is a "choux pastry filled with a hazelnut croustillant, whipped hazelnut ganache using Valrhona Caramelia, then topped with caramelized sugar and toasted hazelnuts"
I personally felt that it was extremely well balanced overall. It can be easy to let the dish be overpowered by the sweetness of the ganache, especially when adding in the caramelized sugar and the chocolate. Texture wise I loved the ratio of pastry to ganache as well. I didn't feel like I was left wishing there was more of one or the other!
