🍽 Black Garlic Ramen
It's been 3 years since I've been to @tokiwa_ramen but just in case, I made sure to be there right before opening. Sure enough, it was absolutely still 💯% worth waking up early for 👌 my friends from #yyc agreed 😋
While there wasnt too much of a line at that time, the place still filled up impressively fast.
For those of you who don't know, they serve both 10-hour pork soup and 6-hour chicken soup, that are cooked over such a long time to get that full, rich flavour in their broths. Once they're out for the day, theyre out- and this is usually within a matter of hours. Both types of soups come with pork charshu (braised pork) with substitutions available.
I got the Black Garlic Ramen, which is one of their 10 hour pork soups, with a shoyu (soy sauce) broth and black garlic oil. My ramen came topped with wood ear mushrooms, bok choy, bean sprouts, fresh green onions, a marinated egg, and their signature fried lotus root garnish
